Dear Madam:-- I have spent considerable of today investigating the milk problem. To be frank with you, I have come to the conclusion that for some reason or other which I can not now determine, your milk does not at all compare with the milk we get from the Otay, and it has every appearance of containing water. I have just learned that you are in the habit of putting a lump of ice into the milk for the purpose of cooling it and drawing out the animal heat, and it may be this is the cause. I have telegraphed to San Francisco for a lactometer, and will see that Mr. Knapp test the milk as it is delivered, and call your man's attention to the matter whenever its not up to standard. In the meantime, will you please give instructions to stop the putting in of ice, and let us see if that will not avoid the trouble. I will also instruct Mr. Knapp to go down and call on you and thoroughly investigate the milk from the time it leaves the cow until it goes to the consumer which I trust will enable us to learn the trouble.
