I was down in the bakery about half past ten last night, and found in a box where the bread is kept, three-quarters of a mince pie, and two plates of cold meat, etc., on the bench where the bread mixed, a lot of silver ware, knives, etc. The silverware belongs up in the dining rooms. Also noticed that the condition of the pastry room and bakery is not at as high a standard as it formerly was. Would like to have it cleaned up, as I want to show some prominent individuals who are at the hotel through there within a day more two. Would like the whole basement gotten in better shape.

I want to make a present to two or three eastern friends of samples of California productions, such as olive oil, pickeled olives, raisins, lemons, and other things that can be transferred by express safely. Can you give me any suggestions as to the best shape in which to send them, and as to anything else you think would be good?
