I took a party through the hotel last year about 10 o'clock and found the back stairs very filthy. Wish you would have your yard men sweep the kitchen and back stairs in the back part of the house late in the afternoon, so when we take parties through as will probably be done every night it will look cleaner than it has appeared. If you have not enough yard men to thoroughly clean it each day you had better get Chinamen to help you. It is important that we keep the rear of the house clean and neat. Impress this fact on the pastry and baker cooks and have them keep their departments cleaner.
